1) Asparagus Sauce
Ingredients
- ½ onion
- 6 asparagus spears
- 1 cup vegetable broth
- 2 tablespoons oat cream
- Olive oil
- salt
Preparation
- Wash the asparagus. Cut the asparagus and onion into small squares.
- In a frying pan with olive oil, sauté the asparagus and onions for 10 minutes, add the cup of broth, cook, boil for 5 minutes, season. Incorporate the cream.
- Let it boil and remove from the heat. Pour the preparation into a food processor or blender and grind.
- This sauce is ideal to accompany a delicious omelet.
2) Parsley Sauce
Ingredients
- 1 bunch of fresh parsley
- 4 water crackers
- 3 cloves of garlic
- Olive oil
- vinegar
- Salt
- Pepper
Preparation
- Wash and drain the parsley, chop.
- Pour the parsley, crackers, peeled garlic, olive oil, and necessary amount of water into a food processor or blender, grind until it resembles a thick cream.
- Season with salt and pepper.
- Pour into a sauce boat and use as a dressing for salads or accompanying legume bites.
3) Vegan Pesto
Ingredients
- 2 cups fresh basil
- ½ cup Nuts (almonds or pine nuts or walnuts)
- 2 cloves minced garlic
- ½ cup olive oil
- 1 tablespoon lemon juice
- 3 tablespoons nutritional yeast (levadura de cerveza)
- Salt
- Pepper
Preparation
- Wash and drain the basil.
- Put the basil leaves, nuts, and garlic in a food processor or blender (a mortar can also be used).
- Process the mixture until it is coarsely ground.
- Gradually add the olive oil, continue grinding.
- Season with salt and pepper and add the lemon and nutritional yeast.
- Grind until a homogeneous texture is achieved.
- Let stand for 2 hours before serving.
- This pesto is ideal for spreading on crackers or accompanying steamed vegetables.
4) Veganaise Eggless Mayonnaise
Ingredients
- 1 glass of sunflower or olive oil
- 1/3 cup soy milk
- ½ clove of garlic
- Juice of ½ lemon
- Salt
Preparation
- In a blender glass, put the soy milk, oil, garlic, and salt, blend at low speed for the necessary time, until a creamy consistency is achieved, add the lemon juice and continue blending until the mixture thickens.
- Use the veganaise in your sandwiches, salads, and all kinds of preparations.
- You can add cooked beet, cooked carrot, avocado, mustard, to obtain flavored veganaise.
5) Tartare Sauce
Ingredients
- ½ cup of Veganaise (see recipe N°4)
- 3 tablespoons capers, olives, pickles, pearl onions.
- Salt
Preparation
- Mix all the ingredients in a food processor, grind.
- Rectify the seasoning.
- Let stand for 2 hours and serve.
- This vegan tartare sauce is ideal to accompany potatoes, vegetable croquettes, or as a salad dressing.
6) Remoulade Sauce
Ingredients
- 1 cup of Veganaise (see recipe N°4)
- 2 tablespoons mustard
- 2 tablespoons chopped capers
- 2 tablespoons chopped fresh parsley
- 1 teaspoon soy sauce
Preparation
- Wash the parsley, drain it, and chop it finely.
- Mix all the ingredients in a food processor, grind.
- Let stand in the refrigerator for 2 hours and serve.
- Enjoy the fresh flavor of this sauce accompanying a delicious white rice.
7) Mojo Sauce
Ingredients
- 6 cloves of garlic
- 1 teaspoon salt
- 1 medium onion
- Juice of ½ orange
- Juice of ¼ lemon
- 50 milliliters (ml) of olive oil
Preparation
- Grind the salt and chopped garlic, until a paste is formed, add the onion cut into small squares, beat and mix, add the lemon and orange juice, continue beating.
- Gradually pour in the olive oil until the mixture thickens.
- It can be served freshly made or refrigerated.
- Serve this sauce accompanying sandwiches or for spreading on toast.
8) Vegan Caesar Sauce
Ingredients
- 250 milliliters (ml) of soy milk
- 500 milliliters (ml) of olive oil
- 4 capers
- 1 clove of garlic
- ½ tablespoon mustard
- A pinch of salt
- 1 lemon
Preparation
- In a container, whisk the soy milk with the oil, until a creamy appearance is achieved.
- Add the rest of the ingredients, and whisk until it is completely homogeneous.
- A very quick sauce to prepare, an excellent accompaniment for grilled or pan-fried vegetables.
9) Vegan Alfredo Sauce
Ingredients
- 2 cloves of garlic
- 1 tablespoon olive oil
- 2 cups chopped cauliflower
- Half a cup of chopped parsley
- 1 tablespoon white wine
- 1 ½ cup soy milk
- 2 tablespoons mustard
- Salt
- Pepper
Preparation
- In a pot with olive oil, place the minced garlic, sauté over medium heat for 2 minutes, add cauliflower and parsley, sauté for 2 minutes, incorporate the wine and cover, cook for 6 minutes.
- Add the milk, when the preparation boils, lower to low heat.
- When the vegetables are soft, put the preparation in a food processor or blender along with the mustard, lemon, pepper and salt, blend until a puree is obtained.
- Pour into a sauce boat and the vegan Alfredo sauce is ready to accompany potatoes and fresh vegetables.
10) Vegan Worcestershire Sauce
Ingredients
- ½ cup apple cider vinegar
- 2 tablespoons soy sauce
- 2 tablespoons water
- 1 tablespoon brown sugar
- ¼ teaspoon ground ginger
- ¼ teaspoon mustard powder
- ¼ teaspoon garlic powder
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon ground black pepper
Preparation
- Put all the ingredients in the blender and blend for 2 minutes.
- Pour into a jar.
- You can keep this sauce for 1 month in the refrigerator.
- You can accompany this sauce with vegetables, different types of rice, as a salad dressing, and as a marinade for vegetable skewers.
