At some point in life, opportunities arise that promise to be transcendent—they shake your solidly built foundations, rattle your basis of support, and invite you to discover, to investigate, what lies beyond your daily life. They beckon you to find your Side B, to step out of your comfort zone. My name is Pablo Chirino; I am a chef by profession, a researcher, and an adventurer. I enjoy writing and sharing the things I love, such as art and the culture of peoples.

Some time ago, we began a long, well-planned journey that takes us through remote places, getting to know different towns: their people, culture, and especially the gastronomic legacy of their ancestors. These are life stories of simple folk who, from dawn till dusk, live their lives through effort and work. We are nomads by nature, returning to the road, just as our ancestors did long ago, leaving comforts behind but embracing the life that awaits us outside.

We will follow a long route, meeting towns, their stories, and the people behind them. A path that will lead us to the discovery of the Ancestral Pot, the mythical origin of human pleasures, and the universal communication that lies behind a plate of food.

The Ancestral Pot and Culinary Discovery

We are interested and willing to recover the oral language of cooking, transmitted from parents to children, generation after generation—a wealth of knowledge.

We will cook alongside the best cooks in the country: the expert masters we find in every town, the Doña Marías and Don Antonios, with their recipes and best-kept secrets. We will discover together that marvelous source of flavors that make up Regional Cuisine, but also their life experiences and those of their families, their journey traveled. A unique social and culinary experience in an improvised pot, wherever we may be.
