Ingredients
- Flour (All-purpose): 2 cups (250 g)
- Brown sugar: 1/2 cup (100 g)
- Powdered sugar: 1/2 cup (70 g)
- Cinnamon: 1 tsp
- Clove: 1 pre-ground unit (Pinch)
- Salt: 1/2 tsp
- Baking soda: 1/2 tsp
- Honey: 7 tbsp (100 cc)
- Butter: 5 1/2 tbsp (80 g)
- Egg: 1 unit
- Vanilla extract: 1 tsp
- Water: c/n (as needed)
Preparation
1- Place the flour, brown sugar and powdered sugar, salt, cinnamon, clove, and baking soda in a food processor.
2- Add the cold butter and process until a sandy texture is formed.
3- Add the egg, vanilla extract, and honey.
4- Process again until a dough is formed. If necessary, incorporate a little water.
5- Refrigerate for one hour.
6- Roll out to 1/6 inch thickness (approx. 4mm) and cut discs with a No. 6 cutter.
7- Place the discs on a buttered baking sheet and bake at 375°F (190ºC) for five minutes.
8- Once cool, use a pastry bag to place dulce de leche between two cookie caps.
